Costa Verde presents you with two fantastic recipes from chef Henrique S\u00e1 Pessoa. Enjoy some fish cakes with salad and, of course, a delicious berry pie for dessert!<\/p>\n<h2><strong>Fish Cakes with Salad<\/strong><\/h2>\n<p><strong>Ingredients<\/strong><\/p>\n<p><u>Fish cakes<\/u><\/p>\n<p>2 croakers<\/p>\n<p>1 egg white<\/p>\n<p>1 clove of garlic<\/p>\n<p>\u00bd green chilli pepper<\/p>\n<p>\u00bd onion<\/p>\n<p>1 tablespoon coriander<\/p>\n<p>1 tablespoon lemon juice<\/p>\n<p>Salt to taste<\/p>\n<p>Cayenne pepper to taste<\/p>\n<p>1 courgette<\/p>\n<p>1 carrot<\/p>\n<p><u>Salad:<\/u><\/p>\n<p>\u00bd red onion<\/p>\n<p>\u00bd cucumber<\/p>\n<p>Iceberg lettuce to taste<\/p>\n<p>Cherry tomatoes to taste<\/p>\n<p>1 bunch of parsley<\/p>\n<p>1 bunch of coriander<\/p>\n<p>1 bunch of mint<\/p>\n<p>1 zatar teaspoon<\/p>\n<p>Olive oil to taste<\/p>\n<p>Lemon juice to taste<\/p>\n<p>Salt to taste<\/p>\n<p><strong>Recipe<\/strong><\/p>\n<ol>\n<li>Fish Cakes: Start by placing 1 corvina, 1 egg white, 1 clove of garlic, \u00bd green chilli pepper, \u00bd onion, 1 tablespoon of coriander, 1 tablespoon of lemon juice, salt and cayenne pepper to taste in a blender jug. Grind everything together and set aside.<\/li>\n<li>Cut another corvina into cubes, grate 1 courgette and 1 carrot.<\/li>\n<li>Add these 3 ingredients to the previous mixture and mix well.<\/li>\n<li>Season with salt and, by using a ring, mould your cakes.<\/li>\n<li>Refrigerate for 20 to 25 minutes.<\/li>\n<li>Salad<\/li>\n<li>Grate \u00bd red onion and \u00bd cucumber. Chop iceberg lettuce and cut cherry tomatoes into small pieces.<\/li>\n<li>Chop 1 bunch of parsley, coriander and mint.<\/li>\n<li>Place the ingredients in a bowl. Mix together and add 1 teaspoon of zaatar. Set aside.<\/li>\n<li>Put a drizzle of olive oil in a frying pan and fry the fish cakes on both sides.<\/li>\n<li>Season the salad, before serving, with lemon juice and salt to taste.<\/li>\n<li>Place the fish cakes on the plate and top with the salad. Season with zaatar and you&#8217;re done.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<h2><strong>Berry pie<\/strong><\/h2>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 beaten egg<\/p>\n<p>Powdered sugar to taste<\/p>\n<p>Vanilla ice cream to taste<\/p>\n<p><u>Dough<\/u><\/p>\n<p>320g flour<\/p>\n<p>2 teaspoons of sugar<\/p>\n<p>Salt to taste<\/p>\n<p>230g frozen butter<\/p>\n<p>6 tablespoons of iced water<\/p>\n<p><u>Filling<\/u>:<\/p>\n<p>250g frozen blueberries<\/p>\n<p>2 tablespoons of sugar<\/p>\n<p>1 tablespoon of cornstarch<\/p>\n<p>Zest and juice of 1 lemon<\/p>\n<p>1 teaspoon of cinnamon powder<\/p>\n<p><strong>Recipe<\/strong><\/p>\n<ol>\n<li>Dough: Start by putting 320g of flour, 2 teaspoons of sugar and 1 pinch of salt into a mixing bowl. Mix in the dry ingredients and add 230g of chilled butter, in 2 stages.<\/li>\n<li>Add 6 tablespoons of cold water, enough to moisten the dough.<\/li>\n<li>Remove the dough to a floured surface. Knead, wrap in cling film and refrigerate for about 30 minutes.<\/li>\n<li>Once it has rested, roll it out with a rolling pin.<\/li>\n<li>Cut out 3 discs and line 3 mini tartlets. Cut off any excess.<\/li>\n<li>Put the moulds in the fridge for about 45 minutes.<\/li>\n<li>Filling: For the filling, add 250g of frozen blueberries, 2 tablespoons of sugar, 1 tablespoon of cornstarch, the zest and juice of 1 lemon and 1 teaspoon of cinnamon powder. Mix well.<\/li>\n<li>Fill the tarts and add another layer of pastry to cover. Make a few cuts in the centre, brush it with beaten egg and bake at 190\u00baC, for 20 to 30 minutes.<\/li>\n<li>Once the tarts are ready, unmould and leave to cool.<\/li>\n<li>To serve, sprinkle it with icing sugar, to taste, and accompany with a scoop of vanilla ice cream.<\/li>\n<\/ol>\n<p>Bring life into your table.
